You really should play Nethack.

I also recommend checking out the original Rogue, which you can find (along with a number of variants) at the Rougelike Restoration Project.

Legerdemain is also worth checking out. It's not exactly what I'd call a traditional rogue-like, but it's quite interesting.

Finally, I recommend you check out John Harris's column @Play. He has some interesting articles about rogue-likes that might point you to some new ones.
