We're there any published books with Knight (PHB2) PrCs included? I'm happy staying a straight Knight... just wanted to see if their are any options out there.

I don't think there are any printed Knight-specific PrCs at all... At least, none that improve the Knight's Challenge abilities. There are other PrCs that fit the style of the knight, such as Knight Protector or Kensai. Both are in Complete Warrior and would probably work rather well with a Knight character.

Unfort. no support for the ole knight, a sweet sweet class, appart from the ole reliable on for hexblades and spell thieves and other unsupported black stallions from the woc stables.
Thats the 'Legacy Champion' (weapons of legacy).. not to shabby for extra skills, chr use, and an epicool knightly weapon/armour/shield: major let down in the HD!
I was always partial to the Dream Dwarf (Races of Stone): Knight 10, Dwarven Defender 10 for pure TANK. Improved toughfness should be allowed by any sane dm to replace toughness. As 'endurance' is a pre-req you may as well hit up 'steadfast determination' (PHB 2) for con to will saves and no fort save fails on a 1... v.v.nice and watching the clerics expressions when his 'heal' only heals half heal your damage nevermind when you make will save he cannot with a wisdom of 8... highly amusing!
As Knight is chr reliant and gets d12 a fine combo is knight/'divine crusader' (complete divine). Nothing quite like moving into 9the level big boy spell casting along with the so called 'casters' after a happy, safe, robust first 7 levels as a knight with no 'i'm dying','i need help' cry babying.
Strength is a fine domain. Dream Dwarf/Knight/Divine Crusader 10/Dwarven Defender 2/Deepwarden (Races of Stone) is a fine, fine build!! Defense/Offence (range and close), specialisation, immunities, robust etc..
As the others said there are no many PrCs suitable for Knight, though he is pretty nice on his own and his 17th and 20th abilities rock. The thing that troubles me with Knight is that he doesn't have Diplomacy as class skill and his weak Fortitude save. You may talk about this with your DM and see if you can get those two "back".
For the PrC: If you already invest in charisma heavily it would be nice to get some Turn Undead attempts to burn on divine feats like Divine Might, and some charisma bonus to all saves . Soldier of Light PrC from Deities & Demigods does it all (note that it is 3.0 though but I think its acceptable for 3.5 game as is). You get TU and paladin's Divine Grace in the first two levels of the class which is great. Requirements are something like BAB +5, Knowledge Religion 4 ranks and patron deity Elishar IIRC. It would deny you Knight's capstone ability if the campaign goes far enough or maybe it wouldn't if the campaign goes even further but its still a good dip (at least better than dipping the Paladin for four levels to get the same). Oh, and Soldier of Light even has some minor spellcasting.
It's not specifically for the PHB2 knight, but Love & War is a great sourcebook for chivalric characters, and includes a number of PrCs and feats that would be great for that kind of character.

Yes, I like that book too. Also, Sword & Sorcery did 'Excalibur' in their Relics and Rituals series. It has some Knight flavored PrCs as well.
I have both. I'll take a look this weekend and find any PrCs that look good and do a quick blurb about each.

Ok, a day later than I intended, but here are some knight-like PrCs from 'Excalibur'.
Excalibur
=======
1. Giant Killer - only good in a campaign with lots of giants, but this class is good for a Knight in that it has a good Fort and good Ref save, full BAB and a d12.
2. Knight of the Realm - very much in the flavor of the PHB2 knight. Cool stuff like reduced armor check penalties, better movement in armor, improved critical with a lance. Good Fort and Will save, full BAB and a d10.
3. Knight Templar - you need to be able to cast Bless. It's a 7/10 caster progression (7 caster levels over the 10 levels of the PrC), good Fort and Will save, bull BAB and a d10.
