I would like to stat out this horrible monster. If anyone here has read beowulf I invite them to join me in making him.
My thoughts are: Large Size or bigger: They talk of him carrying 30 men and people talk of seeing giants in the moors. So he must be big. Claws: Very damage claws because that seems to be his main weapon. Stealthy: I think he should either have gaseous form or really good move silently and hide in plain sight. Half-Hag: Don't know if we should apply the template or apply half fiendish and half hag to a giant.

I've read only parts of the Beowulf legends, but I do think I can help on stating him out.
Make him unique monster, don't give him any templates. However, he should get some hag and fiendish abilities.
Definately high move silent and hide, and maybe hide in plain sight, but not gaseous form, as I don't remember them mentioning him having any similar ability.
MASSIVE strength score, probably at least thirty.
I agree, a good claw attack.
I think large size is more accurate for him than huge.

Hide In Plain Sight: Grendel can use hide while being observed.
How is this for a rough draft? Any comments on CR or so?
I'd give him a bite attack of some kind, and perhaps DR 10/+3 or so. Grendal's mother would have a DR of 10/+5 (Beowulf used an ancient giant's sword to kill her IIRC.)

He at one point "casts a spell" that made the warrior's weapons useless. i doubt the warriors had magic weapons, unless you want to take that as the author's interpretation of what is, inherently, DR.
How is this for a rough draft? Any comments on CR or so?
what does his claw do? 1d8 or 1d10. it's different in the attack and the full attack. You don't need to write up both claws, just say 2 claw.
How did he get a damage bonus of +21? str modifier is only +9?
Maybe make his DR only bypassable by weapons that are magic and silver
