On a somewhat Douglas Adams slant, how about the Church of the Return of Fnargh Moorh?
Based around the idea that one day (maybe soon, maybe tomorrow!), Fnargh Moorh will return, and involves furious debates on what time that will be, exactly what it is that will happen when he does, and how everyone should prepare for that day.
There is also some debate on exactly who or what Fnargh Moorh is, and perhaps why anyone should care if he does return, but this just serves to further enliven cult meetings, and hurried preparations for the Return.
And when he does return, of course, he turns out to be a harried husband who, some centuries ago, told his nagging wife that he'd "be back soon," despite having no intentions whatsoever of returning. She went mad, founded the cult, and now that he's decided that "300 years wandering the timeless depths of the Feywild should be long enough to have been forgotten by now, surely!" he finds himself more than a bit exasperated and simply wants the cultists to leave him alone....

I would be it's high time a cult of technologists rises up and starts to push its innovative ideas on the magic-using heathens. The technologists believe that the magic-using folks are slowly draining away the life-force of the planet, and in an effort to preserve what is left, finds non-magical ways to "better" the world. Sure, it creeps on "witch hunts" and the like, and maybe even a racist "my race is better than everyone else" mentality...
How about a very aggressive cult of atheists?
