I don't think there is a single published product that has "lots" other then the following:
1. DMG II (Kind of a duh)
2. Any of the recent issues of Dungeon Mag since the release of DMG II
There are a few software products that are capable of creating the new format
1. PCGen (Latest unstable version)
2. RPGXplorer (With the help of XML Workshop if I read correctly)
3. NPC Designer (The only one specificly created towards NPC's)
Really depends upon your over all needs and desires as to what the best way to go is..
All of the stat blocks in Margaret Weis Production's recent products are in this format, including the 80-page NPC Appendix to Price of Courage and the stat blocks in Legends of the Twins, Dragons of Autumn, and Knightly Orders of Ansalon.
