There are many options. The completely free option is already on your Mac: QuickTime Player. You can record the entire screen or just a portion of it. See Mac 101: QuickTime Player about halfway down the page.
If you're doing something more professional like a screencast, where you might want to do things like have the mouse cursor be invisible, highlight the frontmost window, edit the recording, add a soundtrack, add text overlays and such, etc., then ScreenFlow is the way to go. It's $99, though.
There are a few options in-between, but really, nothing better than QuickTime on the low end and nothing even close to as good as ScreenFlow on the higher end.
