One reason I don't like to GM on Golarion that much anymore is the lack of a complete map, or at least even a complete continent. It annoys the completionist in me

The Golarion Geography pages, and the interactive Golarion maps (flat map and an interactive globe), are the closest you'll get to canonical maps of Golarion. Everything is registered to specific latitude and longitude, using what is known from existing maps and how they connect, as well as statements of near-canon by Paizo designers.

While the "unmapped" continents and regions are not truly canonical, they were roughed out with guidance from the Paizo. There are links to threads on the Paizo forums that explain how most of the decisions were made.
