Authenticity only matters to me if a claim of authenticity is made and it turns out to be false. Otherwise, I'm all for adapted, inauthentic, and/or fused & hybridized cuisine.
It's great to be fortunate enough to sample authentic cuisine for far-flung parts of the world, but authenticity itself has no inherent value. Good food is simply good food.
