None of the above, my favourite is Sharess, she has a fun and really cool back story, Cat War God, turned nomadic adventurer, turned party girl, turned dark Goddess, turned party girl again.

She's absorded at least two other Goddess, she normally CG, but she's also got titles like Succubi of Sensation that suggest a bad girl side. She is know to turn into a giant Domestic Hunter to hunt those who made her mad, and sleep with those who got victories against her enemies as reward.

She is the only God I know of that is a member of four Pantheons, Faerunian, Yuirwood, Mulhorandi, and Seldarine, (at the very least).

Who grants wishes with a kiss, can look like any woman you desire, then turn into a cat to sit in your lap purring.

She is techniquely a part of the government of Mulhorand, but she'd rather be partying in Calimport or else where.

She also had one of the coolest prestige classes the Dancer of Sharess. The Dancer got a familiar that could turn into bigger and more dangerous big cats for a time, could paralyze enemies with extreme pleasure, had religious favoured enemies and full divine spellcasting.

She's been "friends" with Sune and Shar.

Her son is an insane Drow God of Fighters.

She is the daughter of Ra, the Zandilar part of her was born from Corellon Larethians Blood, and she is worshipped as a beast cult deity called Felidea (a god she absorbed).

She is worshipped by the Mulhorandi, Elves, Half Elves, Tabaxi, Planetouched, Wemics, Werecats, other humans, and who knows who else.

She has lets presence be felt in a few FR novels.

She introduced cats to Cormyr.

She hits on Ilmater all the time because she likes a challenge.

She helped librate her people from Slavery and the Imaskar likely fear and hate her for it.

Her temple in Calimport was protected by a fairy dragon, half giants, and an air breathing Siren. That temple was the most fun place on Faerun (once she took her afterlife to Bright water).

Had a special horse in the Yuirwood.

So much more cool stuff.

In NWN 2 she had a cool pregenerated PC who was a half drow who was called thrice blessed because she survived three major disasters thanks to being a Favoured Soul/Sacred Fist of Sharess

Still she is not strictly human only, since she absorbed the Elven Goddess Zandilar, so perhaps that is why she is not on your list.

I'd go with Lathander, even though I consider Amaunator to be an aspect of him, so maybe I should have voted for him also. My favorite is Shaundakul but he doesnt seem to be on the list.

My favorite goddess lies outside the human pantheon, but within it, it's a toss up among Selune, Mystra, and Lliira. I feel that these 3 goddesses best capture the hopeful and magical spirit of the Realms in the human pantheon.

But, I do not think the list includes demigods (which Elminster may very well qualify for)

You never know, though.

The 3e default setting god Saint Cuthbert was a mortal man who became a god and some older source books touch on people becoming gods...

Not only for the totally metal Title (you know which one!), but also for perhaps the most believable example of a good society promoting the worship of a CE deity.
