How do you design YOUR BBEG monsters?

So, how do you design that big bad evil monster that you pit the PCs agaonst. What is your design philosophy? I have not done this yet, but i am going to design monsters that do not have much HP, but figuring out HOW to kill them will be tough. All the while they are slamming/stomping/clawing/burning you to death. Although i do need some help, my players fight tooth and nail with me so they can get AOOs for any sort of movement a monster makes what so ever. If when i am describing it i say it rears up its haed, they will ask if they get an AOO, and will argue with me till they do. Another player tried thhis once.

Me(describing an arrow hit: Your arrow strikes it in its lower side area.

Player: Hey, would it take extar damage because i hit it where its kidney is around?

Me:*Sighs* No

I was planning on having a big scorpion monster that you have to hit it in a certain area to hurt, you can noly hit it in that area. No ther areas will harm it at all, and that area is well protected.

Well, sorry i rambled. So, what is your monster design philosophy? :)
