I need to sart up a new game soon for for the players of my Mud Sorcerers' Tomb. I'm curious to know what other players and GMs are doing to cope with the loss of invisiblecaste.com.

I am in an interesting period of my life; I will post in games that I run three times a week (M,W,F); and try to maintain obligations in existing games.
...disquieting...
There was no end to his patience and endurance. He played day and night, his obsession was somewhat disquieting. It was less as if he were playing to dispel gloom or beguile tedium than as if he were giving himself up to the fangs of gaming devils."

When I've run games, I pretty much always just roll physical dice myself and have the players trust me on that. Only thing about it is that means the GM is rolling attacks/damage and other things that are usually more player oriented rolls.
I personally vastly prefer to actually have the roll recorded somewhere.
You'll always make a few mistakes, if you've got it "written down online" you can refer back to it.
It forces you to "manperson up" and accept being wrong from time to time (or 50% of the time in my case), but I think that's better really.
Players who can see what you're doing and why and feel comfortable asking about your math are, to my mind, happier. After all, I demand the right to see rolls and double-check stuff, why shouldn't they be able to?

I also prefer that the players roll the dice, to me even though it's the same whether I roll the dice or the DM does, I just have a personal satisfaction of rolling.

Well, usually I'll still POST the rolls, so they are recorded. Also, lately, I've taken to using a piece of paper to jot down rolls in case they need to be referred back to.
Honestly, either way is pretty similar. The only real difference in the online rolling is you have a link to post, where with physical dice you don't(...unless you took a picture of the dice, heh). Overall, I've just found it works easier to handle most of it on my end, and at the same time there are usually some players that use an online roller, too. That allows those who prefer to do their own rolling to do that(well, when the site was up...) and those who don't mind not rolling to focus on other things they enjoy more.
And really, I've never got the satisfaction from hitting a button when 'rolling' a dice as a player compared to the physical stuff. Some part of me just likes to keep the physical dice in the equation, even for a PbP. That and I'm one of those GMs who keeps a lot of rolls behind the screen anyway, so this allows that, too.
When I DM I encourage players to use Invisible Castle to roll. If they don't I'll roll offline and just post results. As a player I'll follow the DMs lead. Some require IC, other encourage it, and others will do all the rolling off screen.
