In search of monster goals during combat other than attacking the PCs.

I think I wandered into this same conversation over on Reddit.

If I did, forgive me if I'm accidentally repeating myself and not just recounting some imaginary post I answered in a dream.

Why are the monsters there and why are they attacking the PCs? Is there a reason why the fight is happening?
I am writing a one shot adventure, where most of the major plot points are decided by rolling on tables. It's for my micro RPG, Here Is Some F**king D&D. Here's how that particular encounter looks now that I've finished filling out the table:

After their meeting with the contact is complete, the Squad is attacked by the villain’s minions, sent to stop them before they can begin their mission. Roll on the Minion & Commander Origin table to determine what attacks and what leads them. During combat, roll on the Minion Complications table once or twice to see what additional mayhem the minions engage in.

Example: Having completed their business with Maeve, the Squad prepares to leave. However, in the monastery’s courtyard, they are suddenly attacked: Exodus has sent a group of praesent euismod tellus, lead by an ut elementum ex id, to stop them. During the encounter, several minions break off and begin to kill people and destroy property.

Here are the tables:

Minion & Commander Origin
1 Praesent euismod tellus 11 Pellentesque id risus tempor
2 Curabitur feugiat eros nec 12 Ut elementum ex id
3 Aenean dapibus urna convallis 13 Donec gravida ex non dolor
4 Morbi accumsan felis sed 14 In vitae sem lacinia
5 Donec sed sem a augue 15 Vestibulum sagittis nisl eu
6 Nunc gravida turpis sed eros 16 Donec at odio id nunc
7 Cras dapibus sapien vitae 17 Sed mollis elit iaculis
8 Maecenas congue erat id 18 Fusce interdum magna
9 Nullam imperdiet lacus 19 Nulla dapibus tellus condi
10 Curabitur ut orci at arcu laoreet 20 Duis nec risus quis enim

Minion Complications
1 Take hostages 11 Dominate people
2 Destroy property 12 Consume everything
3 Kill people 13 Cause a stampede
4 Loot businesses 14 Incite a riot
5 Cast a summoning ritual 15 Steal children
6 Set fires 16 Animate the dead
7 Defile water sources 17 Cast illusions
8 Attack pets and livestock 18 Cause earthquakes
9 Play dangerous games 19 Operate ineffective machine
10 Desecrate holy symbols 20 Control beasts of war

Legend
One with great potential in a city: get out of sight from other people. Just finding a quiet spot to be alone due to Enochlophobia (fear of crowds). This can also cause lashing out in attempts to scare off others.

take something a PC possesses (magic weapon/lock or hair/left hand)
learn the language of its enemies so as to deliver a message
die in glorious combat so as to pass to Valhalla

These monsters are running away from a bigger badder tougher scarier monster that is chasing them.

These monsters are fleeing an oncoming flood wave (Indiana Jones and the Temple of Doom style). Or pyroclastic volcanic eruption (as Pompeii)

These monsters react to -common food spice- as an aphrodisiac and go into rut near the food market (hat-tip to Harry Turtledove's Worldwar series).

These monsters eat wood and attack buildings, chewing chunks out of the doors, frames, rafters (if they can fly), window shutters, &c
