While I enjoy fantasy art and sometimes use it for inspiration I think the big dog - rabbit? - ears just look a bit silly. Especially because, as @Lanefan pointed out, every other race is getting bigger and bigger ears.

Are they more aerodynamic? A signal for sexual selection like peacocks? I mean, they're too big to be functional or practical. At this point it's kind of like antlers on deer showing off how strong they are in order to attract potential mates? Do they have ear batting contests?

I mean, seriously. Where does it end?

I think it's just that the art is slowly catching up to the horrifying reality that there's no such thing as elves.
I fully expect 6e art to reflect this grim truth, and replace the depictions of "elves" with their true form: big anthropomorphic ears, with little elf-shaped buds hanging off.

Question: can anyone explain to me why just about every non-Human is depicted these days as having increasingly long pointy ears?

The Gnome with the turkey (above) has non-pointed ears, which is almost unique in Gnome art. One would think Halflings (a.k.a. Hobbits) would have non-pointy ears but the points have been growing in the art as the years go by. And Elves - I used to think the Elves' ears in Elfquest were over the top but they look pretty subdued next to some of what's out there today.
In the case of halflings, I think it stems from the Lord of the Rings movies. That was the first time I'd seen hobbits given pointy ears.

Delicous in Dungeon is a fantastic manga that I need to catch up on.
I cut my teeth on D&D 3.5's dungeonpunk style of fantasy art, but lately I'm definitely leaning towards brighter, cleaner styles.

It's a lineage-status marker. That guy's in line to be emperor.

Isn't that a Nightborne from World of Warcraft? Elf ears are far from the only thing exaggerated in that art style. You have to remember that is the same game that has armor that looks like this:

Yeah, armour and weapons get oversized far too often as well; which is fine if you're looking for something over-the-top but not much use if you're after something a bit more grounded.
