why can't they be both.

I can have a tribe of man eater kobolds that whoreship a red dragon, and in the same adventure have an evil hobgoblin take over a tribe of sneaky kobolds that are way more nueanced, and in the same game have a group of PCs befriend Meepo and his white dragon...
Sounds like your kobolds aren’t safe to kill on sight then, since they aren’t all evil.

Hey, don't knock it. I'll sometimes get a couple spoonsful of my favorite jam (raspberry) and mix in a splash or two of my favorite wine (pinot) until it has a pourable consistency, then drizzle it over my favorite ice cream (vanilla).

'Vanilla is boring'? pff. You just gotta know how to houserule it.

I don't drink, and I can't see why anyone would want alcoholic beverages in their ice cream. It just isn't appropriate.

How am I supposed to interpret

As anything other than a comment on my morality?
We do have different moral compasses. That doesn’t mean you’re immoral. Your moral framework is just different than mine. There are many different moral frameworks, like deontology, utilitarianism, intuitive morality, etc. One does not have to believe that frameworks they do not ascribe to are immoral.

It's true, not everyone at my table likes alcohol...and I know at least one person who has a history with alcohol abuse; it would be a dick move to serve them alcohol when they least expect it.

I suppose I could thin the jam with water, or their favorite fruit juice. Ooo! Or I could get weird with it, and thin the jam with a splash of strong black tea! I bet the bitter tannins would play nicely with the tangy berries and sweet ice cream...

Don't confuse "non-hostile" for "non-evil". You can still be a LE kobold and decide it's better to work with potential murderhobos ín an attempt to bargain your life and the life of your dragon charge than to needlessly throw it away on a suicide attack.

What does that even mean? We can't have this conversation unless we have clear definitions of things!
When something is not a good idea, but is awesome none the less, it become a necessary thing. Awecessary. See also, real life mechs, liquor delivery services, redzone football channel, etc...
