    It's actually pretty easy to find minis of dragons, giants, and fish people. Here's an, I don't know, adamantine dragon. This could be a conspirator dragon. Also, Paizo has done a lot with Wizkids in the past, I would assume everything in the Monster Core is getting a mini at some point.

    I don't see the Golarion-specific elements as all that limiting. In fact, it gives you an easy reference to decide what equivalent would exist in your world. Like, if in Golarion, something is sacred to Pharasma, in your world, it might be assigned to Hades, Persephone, Hekate, or Anubis.

    A lot of player choices are somewhat diagetic, though. In Exalted, you learn new Charms. In Vampire, you improve quantifiable Disciplines. In D&D, the wizard learns fireball. PCs actually do know their capabilities in some important respects.
