I just had this idea while poking through Savage Species, and though I'd throw it out here. They give basic, if overly vague, guidelines for redoing monsters as classes. These are based on giving the powers of the monsters in (somewhat) even increments over several levels. The even increments over several levels part made me think of epic classes. Why not make epic versions of the monster classes, to make epic monsters?
Take for example, the minotaur class as epic:
9th: +1d8 hd, 2+Int mod skills, +6 natural armor
10th: +1d8 hd, 2+Int mod skills, keen senses (+5), scent (40 ft.), gore 1d10
11th: +1d8 hd, 2+Int mod skills, +7 natural armor
12th: Keen senses +6, scent (50 ft.)
13th: +1d8 hd, 2+Int mod skills, +8 natural armor, gore 2d6, bonus feat
etc.
