I have a bag of about 4-5 sets which I easily carry with me. They are even more than I need, I could leave out most of the d10-d12-d20s and it will still be sufficient but it's just easier to keep them all together.
I bring 15-20 d6s for big spells as the game I play in do go into high levels. I take 4-6 d20s so I can do multiple attackers at once or to just switch up d20s that are acting up and not rolling high enough. 3-4 d8s in case I need to roll hit points for a random encounter or NPC. 3-4 d4s for things like magic missiles. 2 sets of d100(two tens) on the off chance I need to roll on some chart(as DM) or the DM asks me to roll as a player. 2-3 d12s in case I have a weapon that uses them. And a partridge in a pear tree.By carry, I mean carry to a game session, not how many you own. Like most of us, I own a lot of dice. But when I go to a game session, I obviously don't bring them all.
If I'm GMing, I probably bring 3-4 sets with extra d6s--probably 8d6 in total.
If I'm a player, I bring 2 sets, usually color-coordinated with the PC I'm playing (like my silver/blue dice when I play a paladin, or my green jewel dice for my druid, or my Moldvay basic set when I play OSR or AD&D). I will have 4d6, and if I'm playing a caster, 3d8 as well. If I get to higher levels as a caster, I'll probably add some more dice depending on which spells I typically use. Fireball means 8d6 for example.
