Space 1889. The blend just works well, and there will soon be a Savage Worlds version available.

Etherscope. It's d20 Modern-based. It's Cyberpunk blended to Victoriana. I like the focus on the eugenics, the ether-based cyberspace, the dark alternate history. It sort of puts the "punk" back into "Steampunk". It's a different approach than Space 1889, and it's cool in its own way.
 

I just went to check if GURPS: Girl Genius was out yet. Apparently not, but Vorkosigan is. Dammit! I don't even have a group to play with here, but purchase is mandatory. ;)

The title says it all.

What's your favorite steamtech-oriented RPG and why?
Dragonmech or Warcraft RPG (although thr sequal Worlds of Warcraft RPG was also good).

Dragonmech because it added mechs and a Piloting class (Mechjockey, that could be adapted for a ship captain).

W RPG because I loved the crafting technology rules forthe Tinker.

This is a highly detailed Setting, with Steamtech deep ingrained in the Background. There are even steampowered Warmachines, called Warjacks, and the mechanika doesn´t seem to be an addon to a vanilla setting.

It´s very humanocentric, has some ecellent sourcebooks and even an own Minisline to boot.

Oh, and yes I play the warmachinetabletop, but that has nothing to do with my recommendations for the setting

Yes, bad sadly all of these books are out of print, extremely hard to find, and expensive. Privateer Press has thus far abandoned the RPG side of their business and have ignored the pleas of fans who have begged them to release everything on PDF.

Castle Falkenstein is unfortunately one I never got to play. I understand that it was set in an alternate 1870s, with Faerie common and magic behind the industrial revolution.

Heh! I love any game where my battle cry is "God save the Queen" or "For Queen! For Country!".

Calstle Falkenstein is a relatively rules lite game with a fantastic atmosphere and setting. Hell dwarven steam engineers for chrissake!
