What type of benefit package do you think Jedi Knights got?

Very possible that retired Jedi filled much the same niche as retired professors or military do today. Decent retirement plan and benefits. Often still active in society even if not doing front line covert work. A source of information for current active Jedi tasked with a mission to the retired Jedi's old stomping grounds. "Oh, yes, look up Fred in the Blue Moon tavern. Ask about the Brown Cow incident. He will get you settled in...."
They could do very well as after-dinner speakers.

Do Jedi ever live long enough to retire? I haven't consumed all the Star Wars media. Has there ever been mention of a retired Jedi?

I've always seen it as a religious order thusly they get to use Order resources in return for service. I don't think they have benefits packages, sort of like they don't have underwear in space.
There are plenty of elderly Jedi, but their experience is valued so they remain an active part of the community, they aren’t shipped off somewhere out of sight to wait to die.

One way to think of academics who are emeritus; still pretty active to the degree they're able to be, in the communities they want. You can seek them out if you want advice or guidance from a subject matter expert.
 

At no point is “no attachments” said in the films to apply to anything other than family or romance. There is no stated vow of poverty.

I said monastic, not ascetic. They don't live in poverty. They get all the money they need to live comfortably and do their jobs. It just doesn't seem to be personal wealth.

The only sign we see of Jedi who accumulate significant personal wealth are fallen Jedi like Dooku.

So for all we know, Jedi are totally fine with owning things, exactly as many modern Buddhist monks (there are even billionaire Buddhist monks) are also entirely fine with it.

Yeah, but last I checked, Buddhist monks do not have laser swords, space-wizard powers, and work as special forces and generals for the government. May be, just maybe, such people ought to have some ethical boundaries.

I really hope that everyone we see fully clothed is in fact wearing underwear, assuming that’s sensible for their species. Even though we don’t see it, we just assume it’s there unless there’s evidence to the contrary, which is of course a good analogy for this kind of discussion in general. Reminds me of this:

But there’s no obvious bar to personal wealth. So maybe most Jedi don’t accumulate it (they’re institutionalised and have all their basic needs met) but some probably will. And sure, Jedi probably have formal ethical codes and even maybe specific legal requirements, but I can’t see their culture or the Republic caring if one or two of them want to become plutocrats.

I thought George Lucas wouldn't let Carrie Fisher wear a bra under Princess Leia's gown because, according to him, "there is no underwear in space."

I'm not trying to undermine your point, it's just not every day George Lucas's views on outer space undergarments shows up in natural conversation.
