My go-to is a chicken burrito, no rice, with black beans, pico, guac, and the spiciest salsa they have (which is almost never spicy enough here in Portland OR.)
But sometimes I'm in the mood for a vegetarian burrito, and that's when I get scrambled eggs, cheese, green chilis, onions, and pico-- basically an omelet wrapped in a tortilla. I'm not vegetarian, I just don't eat meat with every meal.
Portland might be afraid of spicy salsa, but they're not scared of experimentation. I've had (and loved) some really wild fusion burritos in this town. Korean-Mexican, Thai-Mex, sushi-rritos, they have it all here.
