One has to assume Han bought, traded, and otherwise obtained all the parts for his upgrades on the Falcon.
And, of course, movies aren't games and vice versa. For some folks, there is a fun minigame in gear, ship upgrades and similar resource management and expenditure.

Also, people buy and sell things, and economies exist, even in a galaxy far far away. So the verisimilitude/setting logic argument is alive and well.
 



it occurs to me that I don't know why Tatooine, or at least Mos Eisly, is considered a haven for smugglers and other criminals. Is it just because the planet is off the Empire's usual patrol routes? Why is Jabba there? Why is Han Solo hanging around?
Depends upon which continuity... but generally in both WEG/WotC and Disney/FFG/Edge:
Tatooine was taken over by the Hutts, sometime a few decades prior to Ep I. the Hutts were "nominally" part of the Republic... in the same way as the Corporate Sector: For all practical purposes, an independent stellar nation paying lipservice to the Republic and knowing that it (the republic) cannot afford to enforce its will. It doesn't hurt that Huttspace is within a huge nebula restricting inward/outward travel...

Note that the Outer Rim was NOT part of the Republic during the prequel era, hence Republic Dataries not being acceptable tender on tatooine in Ep I.

Note that in Disney Canon, it gets overrun by multiple other organized crime groups after the fall of the empire, and was during the empire taken due to Vader's connection to it, and it's adjacency to Geonosis (one of three worlds in STL flight range of Tatooine) (see Book of Boba Fett)...
