Chaos Roc Hatchling?

My players discovered a giant egg and lost track of it. Now, they're about to rediscover it, but it's not an egg anymore. Anyone have any ideas for the stats on a 2-day old Chaos Roc?(MMII pf 45, but not that different from a normal Roc).

I have Savage Species but I'm a bit flustered at how to 'regress' monsters down to lower levels and/or CR.

How big was the egg?

You could simply take the stats for a Giant Eagle and change its Prismatic Spray ability into a Color Spray
