I know one GM who would use grid paper to outline the city/town streets, the labyrinth, and even dungeons /cave systems and then laminate them at the local office supply store. Doing this he could use dry erase markers to mark where enemies/encounters via numbers/letters outlining the enemy and their numbers that would be there in a separate notebook before using cut sections of poster board covering sections of the unexplored map.

This year I started using dry erase tiles (5x5 inch and 10x10 inch) and I love them and don't see myself using anything else in the near future.

Before that I using the basic flip mats usually and only occasionally used pre-printed maps.
