The tarasque cant be targeted by spells

Not exactly. Here's an excerpt from the 5e MM description...

Magic Resistance. The tarrasque has advantage on saving throws against spells and other magical effects.

Reflective Carapace. Any time the tarrasque is targeted by a magic missile spell, a line spell, or a spell that requires a ranged attack roll, roll a d6. On a 1 to 5, the tarrasque is unaffected. On a 6, the tarrasque is unaffected, and the effect is reflected back at the caster as though it originated from the tarrasque, turning the caster into the target.

No rule is inviolate
As noted, the Immovable Rod trick won't work unless you find a way to convince the Tarrasque to hold still, but if someone is willing to be a sacrificial lamb, can't see any reason why it wouldn't work to open a rift next to the beast. Mage Hand probably won't work because a Bag of Holding always weighs 15 pounds, and Mage Hand can only move stuff up to 10 pounds, so it can't move one bag into another.

It's pretty generous of a DM to hand out multiple bags of holding or portable holes, etc. Pretty sure the DM will reconsider in the future if you pull this off, but hey, totally worth it.

Random comment: In Spelljammer lore there is a planet in the Realmspace system that has terasques roaming the surface... They are the dominate life form on the surface and eat smaller reptiles, below the surface there is a whole planet full of mindflayers.

Get swallowed by the Tarrasque, Activate the Immovable Rod inside it.

Sovereign Glue the bag to the Tarrasque's back. Wrap a Portable Hole around an arrow and shoot it into the bag.
