(OT Food) I nee a pasta sauce for tonight!

I'm making dinner for seri tonight as kind of a belated 6 month aniversery present.

I just spent a bunch of time goofing off in class searching the net for a recipe I liked with no luck, so I thought I'd ask you guys :)

Does anyone have a simple but good pasta sauce? Something that will take an hour or less to make?

A good ol' fashioned curry sauce! :)

2 teaspoons olive oil
2 shallots, finely chopped
2 cloves garlic, minced
1 red chili pepper, diced
1/4 teaspoon grated fresh ginger
1/4 teaspoon curry powder
1/2 cup tomato puree
1/2 cup mango chutney
1 pint cream
 

blanch 2 tomatos, chop and mix with 2 protabellas that have been seared (covered with oil). toss in oil with oregano, basil a smidge of salt and a bare hint of sage.

sautee in butter, cool, mix in heavy cream, tosover pasta
 

heat 1/2 quart half/half to boiling
heat 4oz butter to boiling (over low flame) with 1oz fresh chopped garlic 1 tsp salt, 1tsp pepper until garlic is a light tan color
mix flour into butter to make a rux about the consistancy of a half cooked pancake
add 16 oz. parmesan cheese (or parmesan ramonao blend) to the half and half.
add rux to the the half/half cheese mixture
add another 1/2 quart of half/half

Serve with Fetuchini (preferably cooked) and call it fetuchini alfredo. (this dish got 3 diamonds when the restaurant I was running at the time was rated by a local food magazine.)

For a righer sauce use heavy cream instead of half/half and cut the butter in half.

For a lighter sauce use whole milk instead of half/half and double the butter.

Alfredo sauce

My fiancee always enjoys the following alfredo sauce:

1 cup heavy cream
1/4 cup butter
3/4 cup grated parmesean cheese
1 clove garlic, finely minced
1 tablespoon minced fresh basil
1 teaspoon minced fresh oregano

1. In a medium sauce pan, combine cream, butter, and cheese. Cook over medium-low heat, stirring frequently, until the cheese is melted. Add garlic, basil, and oregano, and stir for a few minutes more.

That's it. Basic but yummy. I can't stress enough, though, the importance of using fresh ingrediants. Fresh makes a world of difference.

1 onion, chopped
6 tablespoons olive oil
2 cloves garlic, minced
1lb mild Italian sausage, or hot sausage if you prefer
2 (15 ounce) cans tomato sauce
1/2 teaspoon ground black pepper
1/2 teaspoon dried oregano
chopped fresh basil to taste (usually very, very hard to add too much basil)(if using dried basil, use about 1 tsp.
4 (16 ounce) cans diced tomatoes
1 teaspoon salt
2 tablespoons white sugar
1/4 Tsp cayenne pepper, omit if using hot sausage

This one is good when you want to save time, or can't get good, fresh tomatoes.

Saute onion and garlic in the olive oil. Add the sausage in little pieces (removed from casings) and brown. Add everything else, and simmer as long as you can - at least 30 min.
 

1 jar of pasta sauce
add in oregano, basil, and garlic

hide jar in neighbors garbage to complete the effect

Add to that various meats, peppers, mushrooms, and onions and you got the easiest sauce you can get, other then straight from the jar.
 

Fry a pound and a half of ground beef mixed with a chopped white onion and a couple of cloves of chopped garlic.

Mix into about half a jar of storebought pasta sauce, along with one chopped up bell pepper, some oregano, basil, rosemary and ground black pepper. (Season to taste- I recommend a fair amount of oregano and basil and just a pinch of pepper, with rosemary somewhere in between. If you can get fresh basil, you should cook some of it up in the beef and add more to the sauce here.)

You're done.
