Arcane trickster gets the whole arcane list now. Only two of the first three known spells have a school restrictions. So if a 3rd level Rogue-Arcane trickster can get Mage Armor, I expect the Eldritch Knight to be the same.
At level 1, when picking Fighting Styles?

They aren't an Eldritch Knight at level 1, so I don't understand your question.
For example, an Elf who grows up in an Elf culture will enter level 1 with Gish experience. The Fighter class needs away to express gishiness, even at level 1, for narrative reasons. Fight Style works well to do this. For example, the Fighting style itself can swap the Heavy Armor for always-on Mage Armor, plus add a cantrip.

Similarly for the Paladin. The Paladin is a gish. Certain character concepts need to start off gishy at level 1, and the Blessed Warrior Fighting Style did this well enough but needs to happen at level 1.

Well, thing is, this is how they've run Unearthed Arcana for a decade now, and it has worked very well to keep the game on an even keel.
you are probably right, I wasn't around for the Next playtest. That doesn't mean I would not have preferred a different approach (the one I described, where they refine before giving up) however

The Elf is an Artificer.

Fighter doesn't need to do all the work all the time. You want an elf steeped in magic that becomes a warrior? So play an elf steeped in magic. Its a high elf with a combat cantrip like Booming Blade or Green Flame Blade.
