I would go pure cleric of war or tempest. Pick up war caster and your clerical spells are actually good enough to control the battle field. Multiclassing into other spell casting classes just dilutes your ability to cast higher level spells.

Can't tank in 5e, no effective mechanics to force mobs to attack you. Besides, giants have reach and can also throw rocks to deal damage at range. I would think the most effective in controlling the battle field would be your party spell casters since giants are vulnerable to any spell requiring...
War cleric.. All the way with magic initiate for shield spell (which can be cast with your cleric spell slots if I am not wrong) and melee cantrips like Greenflame Blade. Decent damage spamming melee cantrips and spiritual weapon attacks. Firebolt for ranged attacks.

Magic Missile in my opinion just doesn't scale well. Decent at low levels but it's always better to throw a higher level attack spell than a magic Missile using a higher level slot. Hence beyond the first few levels, my wizard never uses it.

Nah nova builds isn't a problem in 5e, just too few spell slots available for use. Spells also no longer scale as efficiently. If played without home brew it is pretty hard to break the game
