There's a druid spell that lets you grow roots and sink in. You get some benifits like fast healing and such, but can't move.

If you see an enemy whipping past and you have your sword out, you'd probably take a swipe by reflex if nothing else. Hence AoO. I'd say you could throw them up, down, left, right, off a cliff, whatever you wanted. Apply flying rules to up and down though, like 1/2 speed up, 2x down etc.
