If a monks unarmed attacks are treated as a natural weapon then does that grant them access to the thayen gladiator prestige?
Or would the wording of "treated" vs "considered" come into play?

Yes, Monk's unarmed strikes are considered natural weapons for all intents and purposes, and can therefor access the Thayan Gladiator PrC.
I'd pick Ghost Touch & Speed.
