Most encounters are geared for the archetypical party of 4. What I usually do as a rule of thumb is increase the monsters proportionally to the size of the party. So if the party is 6 and an encounter called for 8 orcs, I make it 12. Of course, if the monsters have special abilities which could really hamper a group disproportionately in combat (worgs with trip), I'll adjust down a bit, but that's how I usually handle it since I typically run with parties of 6 or more.
