I'm a big fan of the He-man and She-ra Christmas Special. The Garfield Christmas Special was good, too. And the Buffy episode "Amends".

It's not Christmas specific, but "The Gruffalo's Child" was the biggest winter hit with my offspring last year.

And the best Christmas parody ever (IMNSHO) is the Morel Orel Christmas Special. If you've never seen it before, get a copy and watch it at exactly 11:45 on Christmas day (the time/date of the original airing). Do not watch any other episodes of Morel Orel first - this one is the correct first episode of the show.
