Axe beaks are in the Tome of Horrors 1 and the Arms & Equipment Guide. The Fiend Folio has Terror Birds.
Giant Gars I believe were in a Dragon Magazine, and I think one of the Tomes of Horror.

The Bestiary of Krynn for Dragonlance has three different types of flightless bird. Then there's the clubnek from Tome of Horrors 1, the penguin from Frostburn, the kiwi from Ultimate Monsters I, and the tent bird from Creature Collection 3.

I can't find the weed eel anywhere, so may not have been done.
