She was always able to assume the form of Zandilar, she never stop being Zandilar as well, as worshipped by the Elves.

It could be argued the MTOFs really only touched on Zandilar's pre Shares past, not her present, and even the Sharess form really only applies to FR, on other worlds Zandilar and Bast and Felidae are seperate Gods.

MTOF, like other 5e books, refer to the current state of things. With Sharess not being mentioned in 5e, but Bast being in the SCAG, and with other deities having been separated again (Horuse and Re, for example), it's very likely that Zandilar is back, and Sharess is Bast again. Not that it detracts from her, as far as I'm concerned.

He actually is from the Norse pantheon, plenty of interlopers have come to Toril and he's one of them (this could be a retcon added in 2e or the FR creator, whose name I've forgotten, might have mentioned this even earlier).

Is there a big boss god like there are for the other races? Elves have Corellon, Dwarves have Moradin, Halflings have Yondalla, Humans have... Selune? Chauntea? Lathander?

I voted for Red Knight. My HotDQ Paladin was partially inspired by the special 3e Paladin alternate powers dedicated to her.

I wanted to vote for Auppenser. A former mage who discovers psionics and lifts himself to divinity - but is tied to worshippers in his old homeland. When the homeland is depopulated, Auppenser goes into a coma and sleeps. Under the right conditions, Auppenser Awakens...

My re-write of the silly "divine soap opera love triangle" leading up to 4e Spellplague in Grand History of the Realms revolved around Tyr receiving a Certain Summons instead. He makes arrangements in Toril with Torm, Helm, and Ilmater, gathers his host about him (plus some human volunteers who do NOT appear in the Norse myths and therefore might change prophecy and fate) and departs in glory, headed for Odin and Asgard and Ragnarok.
