The CR and encounter guidelines generally assume a 4 person party. I simple method to amp up a monster to compensate for more PCs is to increase its HP and actions. Increase the HP by 25% and add 1 attack action for each character above 4. So, in your case, increase the boss's HP by 50% and give it 2 more attack actions (not including multiattack). To make the fight more interesting, the extra attacks should be on a different count than its turn. Look at 4e solo monsters (after MM 3) or 5e legendary monsters for suggestions on how to handle off turn actions.
