D&D 5E Ideas for playing a Firbolg Twilight Cleric?

I'm planning to play a wise ol' firbolg devoted to Sehanine the Moon Weaver in CR' setting of Exandria, and I could use some help with getting the most out of him in encounters and the world at large.

We're allowed to use Tasha's custom origin rules for racial ASI's, so while I'm definitely keeping the added 2 to Wis, not sure what to do with the leftover one. I'm not sure whether I see this character as stronger or sturdier, or heck, maybe even sneakier if I want some added Sehanine flavor. In the same vein, I'm not sure whether the bonus proficiencies are something to take advantage of or not, since I don't have access to any cantrips that will make my weapons pack a punch.

Also, if you can think of any ideas for how one of these gentlish giants might express their reverence to the Moon Weaver in a culturally fitting way, I'd love to hear.

I don't think you get any tool proficiencies with Firbolg so I would make a custom background based off the Far Traveler or something similar and choose a tool proficiency like cook's utensils. That way you can cook nice, filling vegetarian meals on short and long rests. Who doesn't like a good porridge, right? Or woodcarver and on short and long rests you carve out little statues of Sehanine on tree branches that you stick into the ground as waymarkers wherever you go. If you don't take a tool proficiency then you can do the same by stacking stones to Sehanine wherever you go.

The good thing about the woodcarver tools is that you can go up to another party member and offer to make them some proper arrows instead of that garbage they've been shooting (Xanthar's Guide: 5 arrows/short rest; 20 per long rest).
