Thanks for all your replies! It's always good to hear what solutions other DMs use. LostSoul (if I may call you that): I think that's an excellent approach to DMing certain adventures and would probably help in cutting out some of the more mundane elements in a game. I'll have to try that next time I make my own adventure.

I like laying it all out for them as they go and removing the bits behind them as they are no longer in view. If they map, good for them. If they do not map, they find out that when I set it back up when they decide to leave, I point to a different direction as north, and start setting things up that way...
