Sun Soul Monk is better suited to be taken straight without multiclassing. If you're dead set on having an animal-like PC that fires hadoukens and kamehamehas, see if your DM will allow you to be an Aarakocra from the EEPC. They're bird-people that get bonuses to Dex and Wis, which is what a Monk wants most to boost AC. If your DM thinks that the flying speed is too broken, try to compromise by playing what I call an Aaraquackra, an Aarakocra that has a swimming speed instead. Reskin your appearance to be more like a penguin or duck.
