Funny thought...

Force Sensitivity has a prerequisite of non-droid.

However, the jedi class doesn't say you need to meet the pre-requisites of its starting bonus feats (whereas it's explicitly stated in the noble class you must meet the pre-requisites of Linguist).

Therefore, a droid who takes levels of jedi could then take force training and all the other fun stuff and be an honest to god Jedi!

Seriously, heroic droids get Force Points, which represent a heroic character's ability to tap into the Force (even if they're unaware of it). Why not access to the Force itself?

Even then, there's always the cyborg route...

General Grievous had enough of a core to show up on Force-dar, IIRC, so a character who is 99.9% machine but with a living "processor" might be able to do some force shyt, right?
