IMO, you should have an appendix with the full stat/NPC entries for every creature you use. Even commoners if you have some in a tavern somewhere. (Yea, what are the odds the party is going to get in a fight with commoners in a tavern? Pretty good!)
Then in the adventure part of the adventure, you can put in a reduced stat block of whatever format you like. It's debatable what's best.
