D&D 5E What happened to one-off games?

There are a lot more options than there used to be, yes. (In 4e an off-line CB character sheet could be pretty easy to take in, if you could get past the instinctive distaste for pages of M:tG-like 'cards.') In 3.x or 5e, the complexity of a higher level pregen will mostly be in the spell list, if you're very familiar with spells, no problem, if not, madness - you won't even be able to decide what to prep. The solution, IMHO, is to use classes like the Sorcerer or to present the pregen with spells already prepped. And to have the complete texts of the spells known or prepped readily available (even printed out with the sheet, or, ironically, in the form of spell cards).

Equipment cards aren't a bad idea either, especially for new players. Have one card that says, "Here's a 50' rope. You can tie it to things to climb down holes, use it to clothesline horsemen, tie up bad guys, etc."

Another one says, "This is a bad of spiky caltrops, shaped like jumping jacks straight from the pits of Mordor. If you scatter these on the ground, anyone who runs over them without slowing down may wind up injuring his feet. (DC 15 Dexterity check if not moving at half-speed; on a failure, take 1 HP of damage, lose rest of movement for this turn, and speed goes down by 10' until you heal at least 1 HP.) You can use them to run away or set up a trap."

"This is a torch. It allows you to see well out to 20' (eliminating Perception penalties and combat penalties), and dimly out to 40' (eliminating combat penalties only) and it lasts for an hour; but things in the darkness can see you coming or even smell your torch burning."

"This is a horse. It has trouble squeezing through tight places (needs at least 5' wide corridors to move through at half speed, or 10' wide for full speed) but you can ride it to gain free movement: 60' of movement plus a Disengage or Dash that doesn't cost your own action. The horse has AC 11 and 19 HP and can be killed. It eats twice as much food and drinks three times as much water as a human [AFB so I just made that up -Hemlock]."

"This is a jar of oil. If you spend an action to dump it on the ground and light it on fire, it burns for two rounds in a 5' diameter puddle, dealing 5 points of fire damage to anything that passes through it. It weighs 2 lb. [AFB] and costs 2 sp to refill."

"This is a net. As an action, you can make an attack roll to throw it up to 15' at anto tie it up, preventing it from moving and making it easier to hit, and making it harder for it to hit anyone else. If you are proficient in Martial weapons you gain your proficiency bonus on the net's attack roll; barring special circumstances, the attack roll will always be made at disadvantage; the net cannot be used against a Huge or Gargantuan enemy; it is possible for an enemy to throw off the net with an action or to cut its way through with an slashing weapon. It weighs 1 lb. and costs 1 sp."

"This is a bear trap..." Etc.

Those can be just as valuable as spell cards for new players.

I used to play or run a lot of online pick-up games using LFR, or other modules in 4E and then during D&D Next and 5E. Eventually the virtual table i was using was canned and my schedule got too busy to run or play on a consistent basis. I only game in person nowadays.

I miss the good time and people i got to meet and play with over the time.

People have already listed some good ideas.

I would say, look at TV shows and even movies now.

They used to be heavily episodic and now they've moved into being heavily serialized.

Ongoing, elaborate stories are the norm now. Not "monster of the week."

I run quite a lot of one-shots on Roll20. I prefer it to a regular campaign, though I run one of those, too.

Hmmm...maybe that's what I should do. See if there are any DMs on Roll20, Fantasy Grounds, or d20pro that are running one shots. I prefer in-person games, but VTT may be more practical.

How does Pathfinder Society compare to AL?

I'm not that interested in running Pathfinder, but I see no reason why I wouldn't enjoy playing it. Pathfinder Society is very active at one of the two big FLGS in my area. If it is just AL but for Pathfinder, with similar restrictions, then I don't know that I would be that interested. But looking at their website the FAQs talk about legal pregens at 1st, 4th, and 7th level that you can download. That sounds promising.

Yes, PFS does have legal pregens. I play both PFS and AL. PFS has more paperwork, and because it's a more bloated system, a lot more rules and exceptions, but it is still fun and I enjoy it.

I may have to try a PFS game.

So, lack of higher level pregens in AL is driving me, who is heavily invested in 5e, to Path Finder, just so I can play in a mid-level game a couple times a year.

It was indeed my first shot at 4E. If my players didn't have an intense hatred for "mechanics" that rivaled the Sun in it's burning capacity, I might actually get some 4E books.
 

They're around. Finding a non-AL 5e game at a mid to large sized con might be tough, though.

My beef with one-offs with higher level PCs is that by the time you get a feel for a character you're never going to see again, the game's over. Would rather play AL so I can at least play the same PC for years.

It would be cool if AL had an ICONICS division where players sign up to play one of several pre-established PCs in any given adventure. The PC never levels but players could get to know them well ahead of time and play the same, pretty much unchanging (except for Tier?) PCs that they want to.
