I'd try to find one of the similar-looking dinos and put "sapiens" after it.

Sorry, forgot: keep "saurial" instead of "saurus".

So if a species resembled a stegosaurus, it would be a Stegosaurial Sapiens.

It's not technically undead, see the first ravenloft creature book for details. But one thing to keep in mind is that when you read it's mind you might go mad!
