Kemp: The Road to Crecy by Daniel Hall. Follows the progress of a serf who ends up as a bowman in the English army. Quite a good read and a lot of detail/angst about being tied to the land serving a feudal lord who's a complete idiot... the follow-up...

IMHO I would suggest it depends on the society and the Churches of each world/campaign-setting... if you think about an archetypal high-ranking cleric from this world's past, then their piety often had little to do with their rank.. take very worldly men like Cardinals Wolsey...
