What makes it a tough encounter is that when it's defeated, it explodes into 5d12 giblets, each of which has 1d4 hp.

This stat block is so 5e and doesn't give the turkey enough interesting things to do. Where's the menacing opening of feathers at a blogger taking a picture too close? Or staring at you blankly behind the wheel of your car as it pauses in the road for 5 minutes? Or drowning in the rain (ok, that's a myth)?

In all seriousness, though, is that Strength score a typo? If it's truly a +2 bonus, wouldn't it need to have a Strength score of 14 or 15? Or do the bonuses work differently in 5E than they do in 3.5? (I honestly don't know.)

They do work differently, but yes, it is a typo.

Turkeys get vastly more interesting after 24 hours in brine. I thought everyone knew that.

Why would it have d10 hit dice under 5E rules? I just went back to check the Monster Manual and don't see anything like that for Beasts, either in the introduction to the Monster Manual or across beast entries in the book.
