It wasn't actually a sea, but an enormous sleeping elemental that finally woke up and walked away.

Perhaps there is a god that goes through cycles of death/rebirth that coincide with the disappearance/reappearance of the sea. So long ago the sea god died, took on the desert aspect, now it will die again and be reborn as the sea god. I'm thinking sort of an ancient Egyptian type feel, but that isn't necessary.
