Would a Druid be able to cast Shillelagh (PHB) and Spikes (CD) on the same weapon and have both effects!?

If not, why not !?

Both spells could be cast upon the same weapon. Enhancement bonuses do not stack with each other, so the net result would be a club or staff that did damage as if it were 2 sizes larger (from Shillelagh) with the enhancement bonuses from spikes.

Yes, as long as he casts Shillelagh first.

If he casts Spikes first, then the staff is no longer a non-magical weapon, and is thus not a valid target for Shillelagh.

I think probably not. The rules aren't completely clear, but the most reasonable interpretation is that spells stop working if the target becomes invalid.

As soon as you cast Shillelagh on a non-magical staff, it becomes a magical staff.

Under your most reasonable interpretation, it's now an invalid target, and the spell stops working.

Which makes Shillelagh something of a pointless spell :)

There is no reason this isnt allowed... as long as Shillelagh is cast first. To clarify while you can do this eventually a fighters in the group will have a little blanket party for you or wood will become incredibly scarce.... Or a dragon may accidently light you up like a votive candle.

Why? A druid doing this would be unable to attack for the first 2 rounds of combat and be using 2 of their limited spells per day.
