D&D 5E Question For an Ideal Ranger Build

Hey guys! I just became level 17, and I'm a Hunter Ranger. I'm a bit torn, to be honest, about which of the three Superior Hunter's Defences to take(Evasion, Uncanny Dodge, and Escape the Horde). Any advice?

What I'd best for your character depends on the opponents you fight.
Against breathweapons and fireballs you evasion Will safe your life. But it Will not protect you against a mariliths onslaught or a horde of grunts.

Analyse your game your opponents and your DM and pick up the ability most likely to help your character.
