Solo Adventuring: Any Ideas?

This was the type of campaign I first played in just over 20 years ago. Lately, SHARK has been encouraging me to start a solo campaign to help ease my wife into gaming now that she's expressed an interest.

For my part, I'd start at level 1 just to help develop the backdrop for your campaign, while letting the character grow into a comfortable role. I'd strongly consider a companion NPC or two, and make support available in the form of mentors, safe havens or some minor magical items (potions, scrolls, equipment).
