What happens when you have multiple alchemical items, specifically, a large number of them.

Take Alchemist fire level 1. it does area burst 1 1d6 damage, half when the target saves. This item only costs 20g.

If you take into account that at a high level 19 out of 20 are half damage and 1 out of 20 is full damage that is 36.75 damage per 20.

If you have a box or cart of 300 of these (which would cost 6000 gold), that would do on average 551.25 damage area burst 1.

Spend up to 60,000g and your attack can do 5512.5 damage on average.

What do you guys think of attacks made using this methodology?

You can only attack with 1 alchemical weapon at a time.

This would be like attacking with 20 longswords at once, or shooting 20 bows.

RAW, not doable.

If you are trying to rig up an exploding cart, the DM should use the DMG guidelines for damage for improvised attacks.

Considering it would take you 3000 standard actions to dish out this average damage, I think it is fine as is.
