Also if there is a cleric or paladin in the party make sure you read up on the turn undead rules - they can get tricky to follow at first. And a cleric with a decent turn undead modifier will wipe out an undead encounter with a singel action - very unclimatic.

Another set of rules that is tricky for new DMs (and players) are the grapple rules. I suggest avoiding any grapple type encounters for a little while until the basic combat running becomes second nature to you.

Can. Not will, just can. For reference, I point to "Gray Render Zombie; CR 6; Immune to Turn Undead attempts by a cleric of level 15 or less".

The effectiveness of Turn Undead is dependent upon 1) the turning check and damage results, 2) what undead your party is facing. A Cleric can only solo it if there are very few undead and they have relatively few hit dice both individually and collectively.

If you can, take a look at the Trailblazer Turn Undead and see if you'd rather use those (much more sane results that let you turn the mindless zombie before you turn the vampire lord).

another thing you could try is make the most optimized ECL 6 characters you can.

Or you can always add assassins to the mix. death attack is mean but it will give a good challenge.
 

Definitely get your hands on an Encounter Calculator; there are plenty online.

It will help you immensely in figuring out how many monsters of what CR to throw at the party, and will also figure out the party's effective Encounter Level (which can be difficult if you have more or less than 4 PCs who are not all the same level).

Double check the encounter generated; some monsters such as shadows are more powerful than their CR would indicate.
