Snakes are some of my favorite animals, so I'm a big fan of fantasy serpents. Yuan-ti and Couatl in particular are right up there with some of my favorite D&D creatures.

Oh man, that reminds me of a critter from GURPS Psionics, I think called the iassa. A little furry telekinetic snake that flies and can talk with telepathy.

I have a homebrew snake monster that acts like a constrictor snake except the snake saps your health (dealing necrotic damage) and uses it to grow in length as it wraps you up. This increases the DC of the escape attempt each round (making it less and less likely you'll escape) and increases the hp of the monster.
